Vegan Brown Stew Chicken Jamaican
Brown Stew Chicken is a classic Caribbean dish that is typically made with chicken that is browned in a flavorful sauce. However, for those looking for a plant-based alternative, seitan is a great substitute.
What you need

salt

bay leaves

vegetable oil

seitan

thyme

vegetable broth

ketchup

soy sauce

light-brown sugar

red bell pepper

ginger root

garlic
Instructions
Combine seitan, onion, garlic, chili pepper, ginger, brown sugar, soy sauce, ketchup, and thyme and create a marinade. Allow mixture to marinate for at least 25 minutes. After 25 minutes, add oil to pot and cook only the seitan from the marinade on medium heat until it becomes crispy. Once seitan is cooked, remove from pot and add everything in the marinade to the pot and cook for a few minutes on low heat. Add vegetable broth and bay leaf to the pot. Bring to a boil, then cover and allow to simmer for an hour. Remove from the heat, return seitan to the pot, and let rest for five minutes for flavors to meld. Serve and enjoy!View original recipe
